Awarded National Gastronomy Prize in 1981, he trained as a chef in South West France; San Sebastian and Paris. He managed several Basque restaurants within Spain until the day he landed in Madrid in 1973 to open Zalacain, first Spanish restaurant awarded 3 Michelin Stars, under his command.
